Fatayer is a Middle Eastern gem! It is a really delicious little “pocket” of love! These babies can be filled with anything… even leftovers!

Traditional –

Traditionally Fatayer is filled and prepared in many shapes, usually a triangle, you pinch at the edges (think samosa). They are light and healthy, can work as an appetiser, a snack, or even as part of a light meal.
This recipe really is NO SWEAT! I’ts a simple dough you can make ahead of time and really goes down well with the kids!

I was given this recipe by a friend who got it from her Palestinian In-Laws. I’m sure there is a much more authentic Palestinian version… but I have adapted it to be Bish Bash Bosh (easy) because…. well, let’s face it……….. I’m lazy! 😜
You can use any fillings, or go the traditional route and go for the usual Arabic/Middle Eastern fillings like
Feta Cheese, Akkawi Cheese, Mince, Olives or Spinach. I am a big Zaa’ter (Thyme Mix) fan so I used LOTS of it in my recipe!

No Sweat Fatayer Recipe

A Middle Eastern snack/appetizer that can be filled with anything!

Ingredients

  • 5 cups Flour
  • 1 tsp Baking powder
  • 1 Pack of yeast 2 & half tsp
  • Pinch Salt
  • Pinch Sugar
  • 1/2 cup Oil mixed 1/2 veg, 1/2 olive
  • 1 cup Yogurt
  • A little warm water

Other ingredients -

  • Zaatar Feta Cheese, Olive Oil, Sesame seeds.

Instructions

  1. Activate your yeast in warm water with the sugar.
  2. In another bowl put together the dry ingredients with the salt, then add into yeast and add your wet ingredients.
  3. Kneed for a few minutes then let rest covered in a warm place for about an hour.
  4. Once risen, pre-heat oven. Oil your hands and make little balls with the dough, flatten into your palm
  5. add cheese or whatever filling you're adding
  6. bring the dough around the filling into a ball and flatten again then put on baking tray. Brush with olive oil, add zatar and a bit more cheese on the top and press it in (otherwise they will slip off) and flatten/stretch once again with your fingers.

Recipe Notes

Think pizza when making these, Bake till light golden brown (My oven was 12-13 minutes)

There you have my little adapted version of a real treat, I hope it lives up to the traditional version, while I’m not Palestinian, I’d like to say I can make a mean Fatayer! 😛
